Blueberry Buttermilk Pie

This can be the easiest recipe for pie just by purchasing a good quality pie shell.  I promise the filling will make your guest forget to ask whether you bought the shell or made it yourself.

Blueberry Buttermilk Pie – 1 pie
1 cup fresh blueberries
Pie shell, prepped according to instructions
4 tablespoons butter, softened
1/2 cup buttermilk
1 teaspoon vanilla
3 eggs
1/2 cup flour
1/8 teaspoon salt

Preheat oven to 325 degrees F.

Pour the blueberries into the prepared pie shell.

 

In the bowl of a stand mixer, combine butter, buttermilk, vanilla, and eggs and beat until the butter is broken into nickel-sized chunks.

Combine the flour, salt, and sugar in a separate bowl, and then add to the wet ingredients. Stir the mixture and pour it over the blueberries.DSCN0824

Bake for 50-60 minutes, or until golden brown and cooked through.

Allow the pie to cool to room temperature, and serve with ice cold glass of milk.
