So I do realize that the last couple of posts have been about sweets, and I’m not making excuses…but I love sweet treats when the weather starts changing, and I can’t help myself.
But I do promise that Thursday is thanksgiving, and I will post the entire dinner, with plenty of photos!
So an Almost Everything Cookie is just that, the only real thing that it’s missing is oatmeal, and depending on your preference, dried fruit. I should note that you could probably sneak any of those in these cookies and it would be ok! These cookies are not crunchy either, more of a chewy gooey cookie!
Almost Everything Cookies – Makes 4 dozen +
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
3/4 cup sugar
3/4 cup brown sugar, packed
2 teaspoons vanilla extract
2 cups mixed semi-sweet chocolate chips, bittersweet chocolate chips, classic white chocolate chips
1/2 cup chopped pecans
1/2 cup unsweetened coconut
Preheat the oven to 375 degrees F. Prepare two baking sheets.
Sift flour, baking soda, and salt into a bowl and set aside. In another bowl beat together butter and both sugar until creamy. Add vanilla, and eggs one at a time, and continue to mix until well incorporated.
Slowly add dry ingredient to wet ingredients, while mixing until well blended. Using a spatula fold nuts, coconut, and mixed chocolate chips, into dough until well combined.
Using a tablespoon scoop, drop one tablespoon of cookie dough onto cookie sheets, and bake for 9 minutes, or until golden brown.
Once finished, remove from the oven, and cool on cookie rack.
Enjoy with a tall glass of milk!
