I recently hosted a baby shower for a dear friend, and one of the many things I made included for lunch were biscuits with creamy chicken salad and thin cucumber slices.
Pimento Chesee Biscuits – 24 biscuits
4 cups White Lily self-rising flour
4 teaspoons sugar
2 teaspoons freshly ground black pepper
1/2 teaspoon cayenne pepper
1/2 cup mayonnaise
2 cups whole milk
2 cups shredded sharp cheddar cheese
4 tablespoons diced pimentos
2 tablespoons unsalted butter, melted
Preheat the oven to 450 degrees F.
Prepare a baking sheet with a Silpat and set aside. In a large mixing bowl, whisk together flour, sugar, black pepper, and cayenne pepper. Stir in mayonnaise and milk until the flour is moistened. Stir in cheese and diced pimentos. Drop 2 tablespoons onto prepared baking sheet for each biscuit, about 2 inches apart. Brush the tops with melted butter.
Bake for 10-12 minutes.
