We will buy some freshly steamed lobster claws (John’s favorite part), use the shells as the base for our herbed cream sauce. Cook the pasta until tender, and combine it all for a lovely valentine dish.
I’m sorry we don’t have pictures of this dish, but it’s for a good reason: I wanted YOU to have the recipe for your valentine before the big day. And no worries I’ve made this dish before, it’s delicious! And if for some reason your fabulous self doesn’t have a valentine, do what my girlfriend Sarah and I would do – have a get together with plenty of wine and delicious food.
Lobster in Herbed Cream Sauce with Fettuccine – 2 servings
1 1/2 lbs lobster meat, meat removed, shells reserved
1 tablespoons olive oil
2 tablespoons tomato paste
1 small plum tomato, chopped
2 tablespoons dry white wine
1 tablespoon white wine vinegar
1 garlic cloves, sliced
1 fresh tarragon sprig
1 fresh thyme sprig
1 fresh Italian parsley sprig
3 cups whipping cream
1/2 lb fresh fettuccine
Kosher salt and freshly ground black pepper
Heat oil in a large saucepan over high heat. Add the reserved lobster shells. Saute for 3 minutes and reduce the heat to low. Add tomato paste and stir for 3 minutes. Stir in the tomatoes, wine, vinegar, garlic, tarragon, thyme, and parsley. Add the cream and bring to a boil for 2 minutes. Reduce the heat to medium-low and simmer just for 20 minutes, stirring occasionally. Strain the sauce into a clean large saucepan, pressing on the solids to extract as much liquid as possible. Throw away the contents of strainer.
Cut or break the lobster meat into bite-size pieces. Add lobster pieces to the sauce and gently rewarm over low heat, stirring occasionally.
Meanwhile, prepare the pasta according to the package. Drain and return the pasta to the pot. Add pasta to the sauce; toss over medium-high heat until sauce coats pasta, about 4 minutes. Season to taste with salt and pepper.
Serve in a large shallow bowl with 2 forks, a bottle of white wine.
John says clothing optional, but I’d be careful with hot pasta! haha
